Salmon & Parmesan stuff Potatoes
I made this a few weeks ago and it was delicious. They are twice baked potatoes but the above title sounds so much fancier.
My 2 year old toddler loved these
8-10 Russet or other good baking potatoes
1 can of salmon (or fully cooked fresh salmon, whatever you have on hand/can afford)
1/2 + extra cup Parmesan cheese (shredded/grated)
Preheat oven to 375F. Scrub Potatoes and put them in the oven for about an hour (they are done when they are tender when you poke them with a fork)
Let them cool until you can pick them up then slice them in half and scoop out the insides into a bowl, place the empty shells on a cookie sheet sprayed with oil (I usually line the cookie sheet with aluminum foil to make clean up easier)
Mash the taters with the butter (you can use more or less) and milk to make it smooth. Season with onion, garlic, pepper and salt to taste.
Drain the can of salmon and mix that into the potatoes. Take the 1/2 cheese and mash that in (you can use more or less depending on how cheesy you want, you do want some left over). Fill the empty shells with the mashed potato mixture.
Sprinkle the left over cheese on top of the potatoes then bake in a 375F oven for about 15 minutes
take out and serve. Eat with knife and fork or with your fingers
All my measurements you can change, omit certain things or substitute for other, any meat would be good (just make sure you chop it up fine so you don’t end up with big chunks).You can also put veggies instead of fish for a vegetarian friendly snack/meal.
