Mrs. Kimball’s Soft Molasses Cookies

This is a recipe we got from my fantastic neighbors growing up. They make a great soft gingerbread-type cookie perfect for holiday cookies. You can either roll out the dough and use cookie cutters or just form balls and roll them in sugar and bake. Makes a ton of dough. It also freezes really well.

1C Sugar
1C Molasses
1C Shortening/Butter
1C Cold Coffee
1tsp Baking Soda
1/2 tsp Baking Powder
2 tsp Ginger
1 tsp Cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cloves
5 cups flour
Cream Butter, Sugar, Molasses, and coffee together. Then add rest of the ingredients. It will be a very thick dough. Refrigerate for 2 hours.
Now you can easily divide it into portions to freeze for later use.
Preheat oven to 350F
Roll out dough to 1/4″ -1/2″ thick. Use your favorite cookie cutters and bake each sheet for about 10-15 minutes. Let the cookies cool and then frost.
This recipe makes a ton of cookies.
