Chicken Con Brocoli Recipe
This recipe was inspired by the Olive Garden’s Chicken con Broccoli dish. It’s a delicious dish of chicken breast, pasta and a garlic-parmesan cream sauce and brocoli. It’s by far my favorite dish. Get or make some bread sticks to serve with it (focaccia is very tasty with).
This serves about 4 people
2-4 thin chicken breasts
moist bread crumbs
Kraft Parmesan, Romano, Asiago shredded cheese blend (in the same type of canister as your typical parmesan cheese)
1/2 cKraft 5 cheese Italian (Parmesan, Romano, Asiago, Provolone, Mozzerella)
Garlic (or garlic powder)
Onion (or onion powder)
Pepper and Salt
6 tbl butter
6 tbl flour
3 cups milk
1/2-1 bag of frozen brocoli cuts (or fresh if you prefer) cooked in your preffered method (just omit any butter or flavorings).
1 box of prefered pasta (Olive garden uses shells)
Finely chop/mince about 1/2-1 small bulb of garlic (probably 8-12 cloves)
Mince a small amount of onion as well (about 2tbl)
Melt butter in a sauce pan, once melted toss the garlic and onion in the melted butter, allow the onion and garlic to get aromatic then toss the flour into the butter.
This is call a Roux, this is what thickens the sauce
Add the three cups of milk whisking to keep smooth, put a dash or 2 of black (or white) pepper, whisk until thickened to a creamy consistency, toss in the 1/2 c5 cheese blend (more if you want it cheesier)
Whisk until smooth, if it becomes too thick, just add more milk. Set on warm, and stir occasionally to keep a skin from forming on the top.
To make fresh moist bread crumbs, throw a few pieces of bread in a food processor, toss in some onion and garlic powder and a couple handfuls of the 3 cheese mix. Just press chicken into the cheese-bread crumbs. Take a large skillet and cook breasts until done (you could also bake the chicken if you prefer, I find pan fry faster)
Cook according to the box, and drain.
Put a layer of pasta on a plate, then toss some brocoli on top, lay chicken breast atop that pour sauce over that. Sprinkle grated Parmesan cheese or the 3 cheese blend on top if desired.
I’ve tried making it lower fat with chicken stock instead of milk, it isn’t as good nor as creamy.
